Honey Dijon Turkey Burgers

I have been lax on updating. It has been BUSY around here. This weekend is my big cookie party so I will definitely be posting some cookie recipes next week. We were at a wedding this past weekend so no updates. These burgers turned out so great I had to put them up!

I got the idea to put salad on top of a burger from Rachel Ray. I am a big fan of greens and lettuce on my burgers so this seemed to be a big ‘duh’. This particular burger turned out very tasty with the adding of honey dijon dressing on the greens and burger.

You can substitute the salt, pepper, and turmeric for 1 tbs Penzey’s Bicentennial Rub (if you got suckered into ordering it for your Thanksgiving turkey like I did!).

Honey Dijon Turkey Burgers

serves 5

1 1/4 pound lean ground turkey

1 tsp salt

1/2 tsp pepper

1/2 tsp turmeric

5 slices sharp cheddar cheese

5 hamburger buns (we used the whole wheat sandwich thins)

For salad topping

1/2 tbs honey

1 tbs honey dijon

2 tbs olive oil

salt and pepper to taste

2 cups baby greens

1. Mix the burgers thoroughly with seasoning. Get your pan screaming hot so you get a nice crust on the burgers.

2. Place in hot pan (I sprayed with a little canola oil spray). Cook for 6-8 minutes per side (depending on how thin you do the burgers, you want them cooked through!).

3. After you flip it place cheese on the burger to let melt.

4. Place honey, dijon, salt, and pepper into the bottom of a salad bowl. With a fork whisk them together and slowly drizzle in the olive oil.

5. Toss the greens in the honey Dijon vinaigrette (I spread some of it on the buns themselves as well, depends on how much mustardy goodness you like!).

6. Place greens on the bottom of bun. Place hot burger over top to wilt them slightly. Enjoy!

I served these with baked steak fries and roasted broccoli. They were delicious!
