Apple Pecan Bread
Do you ever notice sometimes with fruit that you buy it and before you know it you have too much? I ended up with about a dozen apples because I kept buying them for snacks thinking I was out. I was not.
This bread is moist and very tasty. The whole wheat flour does not make it too dense and the applesauce helps cut back on the oil.
PS: I put my ove glove in one of the pictures because it is my new favorite kitchen gadget!!! I got a set as a Christmas gift and they are awesome.
Apple Pecan Bread
Makes 2 loaves
2 cups AP flour
1 cup whole wheat flour
1 1/2 tsp cinnamon
1 tsp baking soda
1 tsp salt
1/4 tsp baking powder
3 eggs
1/2 cup apple sauce (unsweetened)
1/2 cup canola oil
1 cup white sugar
1 tsp vanilla
2 cups chopped apple (no skin)
1/2 cup chopped pecans (great with walnuts as well)
1 tsp flour

1. Preheat oven to 350.
2. Combine flours, baking powder, baking soda, cinnamon, and salt in a small bowl.
3. In a stand mixer combine eggs, vanilla, oil, applesauce, and sugar. Mix with paddle attachment until combined.
4. Add dry ingrediants and combine until it comes together. Toss apples and pecans in 1 tsp of flour and then add to the batter. Mix until well incorporated.
5. Divid batter between two well greased ( I use Pam with flour) loaf pans. Bake for 55-60 minutes depending on your oven.
